Carlsons' deli is remodeled

Tucked into a corner of the deli at Carlsons’ Grocery are two new pieces of equipment – a breading table and an automatic fryer.

The equipment, provided by Champs Chicken, a Missouri company, makes it possible to provide deli customers with freshly breaded chicken, fish, potato wedges, and other deep-fried products.

The branded chicken comes pre-marinated and is prepared in batches. Chicken strips and pieces are twice breaded before being placed into the fryer.

The large basket lowers automatically into oil that has no trans fats. The basket rises automatically at the end of the preset cooking period.

The product is tested with a meat thermometer to be sure it is fully cooked before being offered to customers.

In addition to various items for deep-frying, Champs Chicken also provides mashed potatoes and gravy and macaroni and cheese.

“This is definitely a team effort,” said Sheila Williams, an employee who prepares food for the deli during her shift. “It’s a big investment, and everybody has to work together to pull it off.”

Prior to installing the new system, the Carlsons remodeled the deli area and installed new tables and walls.

Champs Chicken normally is available for lunch from 11 a.m. to 2 p.m. and for supper from 4 or 4:30 p.m. to 7 p.m. A special price is offered Tuesday nights.
